2 cups white sugar
1 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract, or more to taste
2 cups shredded zucchini
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground nutmeg
¼ teaspoon baking powder
¼ teaspoon ground cloves
½ cup chopped walnuts (Optional)
½ cup raisins (Optional)
Directions
Preheat the oven to 350 degrees F (175 degrees C). Grease two 9×5-inch loaf pans.
Beat together sugar, oil, eggs, and vanilla in a large bowl until smooth. Fold in zucchini. Stir together flour, cinnamon, salt, baking soda, nutmeg, baking powder, and cloves in a separate bowl; gradually stir into sugar mixture until well combined. Fold in walnuts and raisins. Divide batter evenly into the prepared loaf pans.
Bake in the preheated oven until a toothpick inserted into the centers of each loaf comes out clean, about 50 minutes.

You can substitute any variety of nuts for the walnuts if desired.
